This is one of Justin’s favorites. It makes a fun, easy, parfait-type breakfast where you start with this base and add toppings to your liking. You can also pull it out for a fresh dessert or snack.

I usually make this ahead of time the night before. Double the recipe to enjoy for a few breakfasts or to snack on during the week.

A random ingredient note: Chia seeds can be weirdly overpriced. I’ve seen them priced at a ridiculous $13 a bag, but Target and Walmart it costs more like $5-6, and it’s $3/bag at Aldi.

Here’s a couple of our favorite topping combinations…

  • Kiwi, blackberries, & almond slivers (pictured)
  • Blueberries, banana slices, & granola

Ingredients

(Makes 2 big servings)

2 cups unsweetened vanilla almond milk
1/2 cup chia seeds
1/2 teaspoon vanilla extract
1-2 tablespoons pure maple syrup

Optional toppings:
Granola
Almond slivers
Banana slices
Kiwi slices
Berries – blueberries, blackberries
Dried goji berries

Directions

In a large bowl, combine the almond milk, chia seeds, vanilla and maple syrup. Stir well until the ingredients are combined and the mixture begins to thicken a bit. Cover and put in the refrigerator to thicken further for two hours or overnight. 

Stir again before serving. Add the toppings that you like best and enjoy! If the pudding becomes too thick, a bit more almond milk can be stirred in.

Store covered in the refrigerator for up to 5 days.
